I hope everyone had an amazing memorial weekend. Scott, Ellie, Bogart, and I had a wonderful time. We made grilled corn, burgers, vegan burgers from scratch. I finally was able to jump into the pool this weekend due to the heat. Ellie had a great time, though she woke up with a fever today. So shes home with mama, and work will have to wait. As she naps, I chopped up some grilled corn from yesterday, and finely diced the scallions. Heated up sesame and coconut oil in a pan and poured it on top of the scallion and corn. I seasoned it with dried tomato/and spicy basil seasoning from Linda's Garden in Virgina. I used sea salt instead, and the result is a salty, sweet, savory, crunchy surprise. Make sure you pour the hot oil over the scallions first, it just cooks it slightly, and then toss it together. The sesame scent after it being cooked, is really beautiful. yum.
Ingredients:
-Grilled Corn
-Finely Chopped Scallion (Handful)
-Sea Salt, (Finger Sprinkles)
-Tomato Spicy Basil Dried Seasoning (Lindas Garden, VA)
-Sesame Oil and Coconut Oil heated up super hot in pan. 1 tablespoon
(Be Careful When Heating the Oil Up in the pan)
