Today was one of those mornings where, my husband Scott was able to drop Ellie off Daycare in the AM. The rare moments that this happens, I literally feel like a bird out the cage for a couple of morning hours, and things just start happening. I love my Ellie to pieces and we have our morning mother and daughter ritual before I drop her off. Though it is so ever nice that MOMMY V, gets a break every once in a while. So today I cracked two eggs and whipped it together, took out some pico de gallo, button cap mushroom, apple smoked bacon Gruyere cheese, sesame oil and made myself a delish spanish/chinese omelet. Its a bit chinese because I ran out of regular oil and butter, chinese sesame oil is great with fried eggs, but don't flood the pan with it. Just a dash would do wonders. GOOD MORNING! ;-)
